Fried rice is a simple dish from the preparation point of view, but yet very special in matters of taste. It is a colorful dish with dots of green and red in offwhite background. Vegetables like cabbage, capsicum enrich its flavor and nutritional benefits. It takes 30 minutes to prepare delicious vegetable fried rice.
Fried rice can be easily made at home and is also served as a main course dish in restaurant. Besides it’s a popular street food due to its awesome flavors. It is generally known to be an Indo Chinese cuisine.
- 4 cups of precooked rice
- 2 spring onions
- 2 table spoons of sesame or peanut oil
- Black pepper
Equipments and materials required:
- Frying pan, skillet or Dutch oven
- Vegetable slicing machine
- Rice cooker
Step 1: Slicing vegetables
At first, cut the vegetables i.e. spring onions, cabbage, mushroom, carrots and capsicum and other vegetable ingredients into small pieces. This can be done using a sharp edged knife. Alternately, one can use a vegetable slicer to chop the vegetables into fine pieces in less time.
Step 2: Initiation of frying
Pour some sesame oil in a large frying pan, measuring approximately 14 inches. Turn on the heat. As soon as the oil gets heated, add spring onions and stir fry to observe the chopped onions getting a reddish tinge. This takes approximately 1 minute.
Step 3: Adding vegetable ingredients
Then one by one, add carrot, cabbage and capsicum pieces. Carrot pieces are added first because they need more heating time to get cooked. Toss the ingredients on high heat for around 3-4 minutes. Observe them getting tender and soft.
Step 4: Addition of spice
Add salt and pepper. Cook the mixture on high heat for one minute.
Step 5: Addition of rice
Add pre -cooked rice and stir nicely so that the vegetable ingredients and spices are well mixed into the rice, making a uniform mixture. Cook the mixture on medium high heat for 1 minute.
Step 6: Tossing with vinegar
Stir the mixture again and leave on medium high heat for another minute. Then, add vinegar to it. Toss the contents on high heat for 30 seconds. Turn off the heat
Step 8: Serving
Serve hot fried rice on dish. Garnish with coriander leaves and sauce.
- One should prefer to use medium to long grained rice during boiling to get fluffy boiled rice.
- One may also add minced garlic during fried rice preparation. The garlic should be fried such that it gets well toasted.
- Pepper used should preferably be freshly ground.
- One may also add green or red chillies to fried rice, depending on one’s own liked flavor.
Schezwan fried rice
Schezwan fried rice is vegetable fried rice with the inclusion of Schezwan sauce, which makes the rice extremely delicious. It is primarily a Chinese or Indo Chinese cuisine. A lot of time goes into preparing the ingredients and chopping them into fine pieces. But once the ingredients are all ready, it is very easily prepared as the maker is required to simply toss the ingredients on high flame for making yummy Schezwan fried rice.
The secret of the taste of Schezwan fried rice is in preparing the Schezwan sauce in the best possible manner. Schezwan sauce is a Chinese condiment which adds to the taste of fried rice. It primarily includes red chilly, chopped ginger, garlic and salt.
- 1 cup Basmati rice
- Sesame oil
- Celery or coriander
- 2 tablespoons of Schezwan sauce
- Black pepper
- Olive oil
- French beans
- Spring onions
- Red chillies
Equipments and materials required
- Rice cooker
- Frying pan
- Food processor
Step 1: Rice preparation
Soak Basmati rice for 10 minutes in a bowl. Cook in a rice cooker with a rice water ratio of 1:2. Once the rice is boiled, it should be set apart for cooling.
Step 2: Preparation of Schezwan sauce
Cut open red chillies. Soak them in hot water for 30 minutes. Alternately boil them for 10 minutes. Drain red chillies and grind them with some water in a mixer to get dry red chilly paste. Fry chopped garlic in oil in a frying pan for few minutes. Add crushed ginger and fry the mixture on medium flame. Add 3 tablespoon of chilly paste and sauté the mixture well. Add some water. Add soya sauce and vinegar. Mix again. Add salt and pepper. Add one tablesoon of tangy tomato soup for enhanced flavors. Fry for only 2 minutes more to get the right texture. Schezwan sauce is ready.
Step 3: Pretreatment of rice
Add some olive oil to boiled rice. Mix well with rice. Keep it aside. It is better to put the rice for freezing for half an hour. It helps the rice to hold onto its shape during frying.
Step 3: Slicing vegetables
Cut spring onions, capsicum, carrots, cabbage into fine pieces using a sharp edged knife or with the aid of a food processor. Finely cut vegetables ensure greater taste and health benefits.
Step 4: Initiation of frying
Heat olive and sesame oil in a large frying pan on a high flame.
Step 5: Frying the ingredients
Add finely chopped ginger, garlic and celery pieces. Fry the mixture till it becomes light crisp.
Step 6: Frying onions
Add thin slices of spring onion whites. Fry on a high flame.
Step 7: Addition of capsicum
Add sliced capsicum. Fry for one minute.
Step 8: Addition of other vegetables
Add chopped vegetables to the mixture. Stir fry on high flame for 2 minutes. Ensure that the carrots and beans are crisp and crunchy enough. Do not heat for too long.
Step 9: Addition of Schezwan sauce
Add salt and pepper powder followed by adding vinegar and Schezwan sauce. Mix the added contents well.
Step 10: Addition of rice
Add processed rice and spring onion greens. Ensure that the rice does not contain any lumps. Mix everything gently but in a way that the distribution of vegetables and other ingredients is even throughout.
Step 11: Serving
Serve hot with delicacies like dry Chilly Paneer.
- If one wants to prepare large quantity of fried rice, mix rice and toss small portions of rice in one tablespoon of oil.
- The cooking needs to be done over a high flame. This enables the added vegetables to retain their crispy attributes and produce the best flavor in food.
