- Parmesan cheese
- Spatula or wooden spoon
Step 1: Crack 4 to 6 large eggs into a bowl. Add a pinch of sea salt and black pepper.
Step 2: Using a fork, beat the eggs so that the pulpy yellowish interior comes out.
Step 3: Select a pan according to the quantity of meal being prepared. Put the pan over low flame and drop in it some butter. One may also add bits of oil into the pan. Keep moving the pan with the help of handle so that the contents flow all over the surface.
Step 4: Let the butter melt and assume a froth like appearance. Then pour the pulpy yellowish mixture into the pan.
Step 5: Stir all the ingredients using a wooden spoon or spatula. As the eggs start to solidify, the mixture might adhere to the pan. Take care to scrape the mixture from the edges. This ensures uniform heating and prevents brown skin formation on the lower surface.
Step 6: Gradually, the mixture looks silky and delicious. Remove the pan from the heat. This should be done before the moist character of the mixture is lost.
Step 7: Add butter and serve it on plate. Sprinkle using black pepper.
Step 8: For flavor enhancement and garnishing, one may add to it basil pieces or Parmesan cheese.

- 2 tablespoons of milk
- Butter cubes
- Skillet or non stick frying pan
- Vegetable slicer or food processor
Step 1: Crack 4 eggs in a bowl. The bowl should have adequate depth in order to support vigorous shaking without loss of any ingredients
Step 2: Finely slice ingredients like herbs, scallions, mushrooms, cheese and tomato into small pieces.
Step 3: In order to tender the eggs, add milk, cream or water to the egg mixture. If heat is too high, liquid will start separating from the eggs. This must be prevented, so heat should be medium high. 2 tablespoons of milk are required for one egg.
Step 4: Whisk the ingredients well to get a uniform mixture.
Step 5: Heat a skillet or non sticky frying pan over medium heat. Melt in it, a small cube of butter. Butter provides good flavor to the final dish.
Step 6: As soon as the butter layer starts to bubble, add the egg mixture. Reduce the heat to medium low at this point. Sprinkle some salt and pepper over the egg mixture, but don’t stir.
Step 7: Add minced herbs, chopped scallions, shreds of cheese, sautéed mushrooms, chillies and tomato pieces to the egg mixture.
Step 8: With the help of a wooden spoon, scrape the pasty egg mixture which tends to stick to the edges of the pan and bring towards the central area, forming curd-like viscous mixture.
Step 9: Gradually, you can see the egg mixture getting a semisolid fluffy constitution from an earlier liquid state. Turn off the heat supply, but leave the skillet on the burner itself so that the scrambled eggs do get cooked from the residual heat in the eggs.
